In nutrition, I can in calories, fat grams or out? Carbohydrates?

when when i am on cutting season
i usually eat around 2500-3000 cals medium fat,high protein,low carbs under 100gms/day
my goal is to lose as much fat as i can while maintaining as much muscle size as i can in a cutting season ie lose body fat.
also cardio is very important

If your a trying to lose body fat that you already have, looking at the nutrition facts is not going to help you. You need to do some form of aerobic exercise.
If you are trying to cut fat from your diet, then yes, look at the fat in the nutrition label.
Mainly you want to look at calories. To find out how many calories you need to eat go to lose weight go to http://nutrition.about.com/od/changeyourdiet/a/calguide.htm and enter age sex height and weight. Then it will tell you how calories you need to eat to loose a pound. Then try to eat to maintain that calorie amount and subtract calories in your calorie count by the amount of calories burned when you exercise.
